    Stage zero. Fish roe is collected directly from the fish, which means it was never fertilized.

    As I know it is fresh. For example I read about Beluga Hybrid caviar on https://globalseafoods.com/products/beluga-caviar that it is farm raised and fresh, never frozen. I like it so much!
