    You mean besides the sturgeon that is used for the black caviar. The answer is we do.
    Above is roe of salmon placed in a piece of gunkan sushi with rice and seaweed. This is common in sushi bars in Japan. In fact salmon is just one of many fish eggs used. Herring eggs flyfish eggs and smelt eggs are used in a similar style gunkan sushi roll.

    Caviar is the commercial name of sturgeon roe. Other fish roe have different names or are just called roe if preserved in salt, or other names of preserved differently (for instance bottarga is died mullet roe). As for me I prefer Siberian sturgeon caviar https://globalseafoods.com/products/...n-caviar-fresh very cool!
